Vazhakkai as a vegetable is very popular in the south and there are a whole bunch of recipes that can be made with it. Most popular ones are Chips, Curry,Baji, Roast and Podimas. Moru moru is popular in my aunts house. It was almost like chips but in a cube form and tasted heavenly when deep fried and served. The day before yesterday, I brought some Vazhakkai and I decided to make Vazhakkai Moru Moru. Instead of deep frying I opted to broil them. Mixed the moru moru with some fresh veggies and made a salad out of it.
Gadgets:
Knife
Baking Tray
Bowl
Red Onion - 1/3 sliced thinly
Tomato - 2 de seeded any kind
Lemon - 1/2 lime juice
Oil - 1 1/2 tsp
Salt
Chaat Masala - as per taste
Turmeric Powder - 1/tsp
Chilli Powder - 1 tsp
Asafoetida - a few shakes
Cilantro- 1 Tbsp
Green chilis - 1
Peanuts - 1/4 cup roasted
Preparation:
2. Add 1/2 tsp of oil to the baking tray and 1 tsp to the vazhakkai and mix well.
4. In the meantime, cut onions, tomatoes (remove seeds), cilantro, green chilis and mix them in a bowl.
