A week or two ago I was having dinner at my sisters' and my brother in law Shaker made this wonderful salad dressing that he called Green Devi. It was his attempt to recreate the dressing that he has often tasted at Matha Amirthanandha Mai's spiritual retreats. I usually never like to add dressing to my salad. Quite happy and content with pepper, salt and olive oil, I did try this one out of curiosity for the name Green Devi. This dressing is very rich and creamy and I liked the consistency and could not stop myself from having more. Its pretty straightforward and simple to prepare. My entry to No Croutons Required- Salad Dessing hosted by Lisa's kitchen for the month of August.
