Green Devi Salad Dressing

A week or two ago I was having dinner at my sisters' and my brother in law Shaker made this wonderful salad dressing that he called Green Devi. It was his attempt to recreate the dressing that he has often tasted at Matha Amirthanandha Mai's spiritual retreats. I usually never like to add dressing to my salad. Quite happy and content with pepper, salt and olive oil, I did try this one out of curiosity for the name Green Devi. This dressing is very rich and creamy and I liked the consistency and could not stop myself from having more. Its pretty straightforward and simple to prepare. Gadgets:

Blender/mixer
Cutting Board
Knife

Ingredients:

Olive oil - 1/2 cup
Avocado - 1
Salt
Pepper
Apple Cider (optional) - 1tsp
Water- 1/4 cup
Garlic - 1 clove
Lime Juice - 1/2 lime
Cilantro leaves - a few (optional)


Preparation:

1. Cut the avocado lengthwise, remove pit and scoop and add to the blender.

2. Add the pepper, salt, apple cider, oil, garlic, lime juice and blend.

3. Add water little by little and blend to the consistency that is creamy.

4. Serve on top of salad mix or any salad that is prepared.
