10 Minute Outstanding Pasta

Pasta! Pasta! Pasta! the most famous and most desired food among most kids out here. My daughter loves the stringy spaghetti or campanile type of pasta and I have started making more of those to get her to enjoy her food and finish up her meal without much supervision. I made this 2 days ago and it was truly delicious and loaded in flavor. For those spicy food lovers add more pepper or even crushed chilli flakes but please do try this for its taste and aromatic flavor.It is also healthy because I made it with multi grain pasta. If you are a garlic lover like me it would win your vote.

Gadgets:

Pot to boil the pasta
Strainer
Kadai or vessel to saute
Wooden Spoon

Ingredients

Multi grain spaghetti/campanile pasta (from Trader Joe's or any supermarket)
Water
Oregano 1 tbsp
Basil 1 Tbsp
Salt to taste
Pepper (fresh grounded) as per taste
Cherry Tomatoes - 30
Garlic - 12-13 cloves or one whole garlic
EVOO (Extra Virgin Olive Oil)- 4 tbsp
Pine Nuts - one hand full (as much as you want its optional)

Preparation:

1. Boil water in a big pot as per the instructions in the back of the multi grain pasta. It usually tastes 8 minutes to cook the whole packet.Remember to season the water with some salt and 1tsp oil.

2. Peal the garlic and cut it into slices or mince it.

3. Cut the cherry tomatoes into half.

4. While the pasta is cooking, Heat the kadai and add 2tbsp of the EVOO. When the oil warms up add to that chopped garlic and cook it for sometime.Add salt and pepper to the garlic oil.Add pine nuts and give it a toss to just warm it up a bit. Turn off the flame and then add cherry tomatoes. Mix it with the garlic oil and let it sit for a few minutes.

5. In 8 minutes your spaghetti will be ready. Drain the water out setting aside 1/2 cup of the pasta water. Add 2 tbsp EVOO,Oregano, dry Basil, salt and pepper to this pasta and toss it well. Add the 1/2 cup pasta water and the garlic tomato with oil and toss it well. Serve it hot with a wonderful salad or bread and you would feel so wonderful.
