10 Minute U.K. (urulai-kizhangu)/ Potato Roast

Breakfast food is very popular in my family. Whenever we have people over for breakfast my nephew who calls himself Potatoraja demands that I have his favorite U.K (Urulai-Kizhangu in Tamil) or Potato on the menu. To make him very happy I always come up with new ways to serve potato. I had no doubt but to send in my entry of Spicy Potato Crunch also known in the south as U.K roast to WBB-Microwave Food Announcement hosted by Easycrafts.

As an experiment I made a batch on the microwave and another on the stove top. It took me 10 minutes to do both from start to finish, but the end product was different. The stove top needed more oil but was moist and roasted but not crunchy, while the microwaved potato used very little oil and was very very crunchy. The best for a person on a low fat diet minus the cheese.

Gadgets:

Microwave
Microwavable bowl that has a square bottom.
Spoon
Veggie Chopper
Cutting board
Knife

Ingredients:

Red Potatoes - 4
Salt
Chilli powder - 1 tsp
Olive Oil - 1 tsp
Freshly ground pepper - 1/2th tsp
Turmeric powder - 1/2th tsp
Shredded cheese - 1 Tbsp (can add more as per taste)

Preparation:

1. Wash 4 red potatoes and using the cutting board make 1/4th inch slices and then place the potato on the veggie chopper and press them into small even squares.

2. Take the microwaveable bowl and transfer the potatoes and add oil, turmeric powder, chilli powder,salt and asafotida and coat the potatoes well.

3. Microwave it on high for 3 minutes. Take them out and mix it well and put it back two more times for 3 minutes.

4. When you remove after 3 minutes it will be crunchy. Add some shredded cheese, fresh pepper and salt if needed. Mix well and serve them hot with another breakfast food.

I tried this recipe finally.. without the cheese and cut the potato cubes bigger. It was delicious and effortless. Except for mixing it up and putting in the microwave there is no work. We all loved it.
